250g Unsalted Butter, softened
250g Castor Sugar
4 large
Eggs, beaten
200g Ground Almonds

1 tsp Almond Essence
35g Self Raising Flour

Top with 75g Raspberries... or why not try Pear Slices or Rhubarb! 

 

Method

1. In a mixing bowl, cream together the butter with the sugar until thoroughly mixed.

2. Gradually mix in the beaten egg, mixing well between each addition.

3. Sift the flour and ground almonds and stir them into the butter / egg mixture, mixing gently.

4.  Place mix in lined baking tin, and sprinkle on raspberries.

5.  Bake for 45-55 minutes on gas 5, electric 360f, Fan assisted 180c.
